High quality ice cream has very little air whipped into it. This gives it a slow melt and a rich mouthfeel. When you press your spoon into it, there should be a bit of resistance. If it feels like eating frozen whipped cream, it is low quality. Every bite should be a concentrated burst of flavour.
Avoid the Drip
In our humidity, the clock starts ticking the moment it leaves the freezer. A good server knows to pack the scoop tight. If you are going for a cone, check that it is crisp. A soggy cone is a tragedy. For the best experience, eat it fast or find a spot with strong air conditioning.
