Hand-Torn Goodness
While you can get machine-cut noodles, the traditional 'Mee Hoon Kueh' style (hand-torn) is the way to go. The irregular, flat pieces of dough have a chewy texture that catches the soup perfectly. A good dough should be springy, not doughy or floury. It is usually served with minced pork, leafy greens, and a cracked egg that poaches in the hot broth.
The Anchovy Punch
The broth must be clear but full of umami. This comes from boiling ikan bilis (anchovies) for hours. The bowl is topped with more fried ikan bilis for a salty crunch and Mani Cai for a bit of sweetness. If the soup is thin and flavorless, the stall is not doing it right.
Quick answers
- Can I get it without soup?
- Yes, the dry version is very popular. It is tossed in a dark, savoury sauce and usually comes with a side bowl of the anchovy soup.
- Is it spicy?
- The dish itself isn't, but it is always served with a side of sharp, tangy chili sauce that packs a punch.
