The Mould Shape
The flower shape is iconic. The flour is steamed just long enough to hold its form but remains powdery and soft. If it is too hard, it means it was over compressed or left out too long.
The Filling Balance
You usually choose between ground peanuts or shredded coconut cooked with red sugar. The filling should be centered so you don't just get a mouthful of plain flour. The small square of pandan leaf underneath adds a subtle scent.
