The Shell Anatomy
Look for the 'feet': the little ruffled rim at the bottom of the shell. The top should be smooth and matte. When you bite in, there should be a slight crunch followed by a chewy interior. Two bites and it is gone.
The Ganache Core
The filling should be flavorful and creamy, not just sugary. Whether it is salted caramel or rose petal, the taste should be distinct. A bad macaron is hollow inside or tastes only of white sugar.
Quick answers
